Kadhi Pakora is a popular Pak-Indian dish that is made with a yogurt-based sauce (kadhi) and deep-fried gram flour dumplings (pakoras). Here's a simple recipe for making Kadhi Pakora:
Ingredients:
- 1 cup gram flour (besan)
- 1/2 cup yogurt
- 1/2 cup water
- 1 tsp cumin seeds
- 1 tsp mustard seeds
- 1/2 tsp turmeric powder
- 1/2 tsp red chili powder
- Salt, to taste
- Oil, for deep-frying
For the pakoras:
- 1/2 cup gram flour
- 1/4 cup finely chopped onion
- 1/4 cup finely chopped spinach
- 1/4 cup finely chopped cilantro
- 2 green chilies, finely chopped (optional)
- 1/2 tsp cumin powder
- 1/4 tsp baking powder
- Salt, to taste
- Water, as needed
Instructions:
- To make the pakoras, mix together the gram flour, onion, spinach, cilantro, green chilies (if using), cumin powder, baking powder, and salt in a bowl.
- Slowly add water as needed to make a thick batter.
- Heat oil in a deep-frying pan over medium heat.
- Using a spoon, drop small balls of the batter into the hot oil and deep fry until golden brown and crispy. Remove with a slotted spoon and set aside.
- In a separate pan, heat some oil and add cumin seeds and mustard seeds. Let them splutter.
- Add the turmeric powder, red chili powder, and gram flour and stir well.
- Slowly add the yogurt and water, whisking continuously to avoid lumps.
- Bring the mixture to a boil and then reduce the heat to low and let it simmer for 10-15 minutes, or until the kadhi thickens.
- Season with salt to taste.
- Gently add the pakoras to the kadhi and let them cook for an additional 2-3 minutes.
