Kadhi Pakora is a popular Pak-Indian dish that is made with a yogurt-based sauce (kadhi) and deep-fried gram flour dumplings (pakoras). Here's a simple recipe for making Kadhi Pakora:

Ingredients:

  • 1 cup gram flour (besan)
  • 1/2 cup yogurt
  • 1/2 cup water
  • 1 tsp cumin seeds
  • 1 tsp mustard seeds
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder
  • Salt, to taste
  • Oil, for deep-frying

For the pakoras:

  • 1/2 cup gram flour
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped spinach
  • 1/4 cup finely chopped cilantro
  • 2 green chilies, finely chopped (optional)
  • 1/2 tsp cumin powder
  • 1/4 tsp baking powder
  • Salt, to taste
  • Water, as needed

Instructions:

  1. To make the pakoras, mix together the gram flour, onion, spinach, cilantro, green chilies (if using), cumin powder, baking powder, and salt in a bowl.
  2. Slowly add water as needed to make a thick batter.
  3. Heat oil in a deep-frying pan over medium heat.
  4. Using a spoon, drop small balls of the batter into the hot oil and deep fry until golden brown and crispy. Remove with a slotted spoon and set aside.
  5. In a separate pan, heat some oil and add cumin seeds and mustard seeds. Let them splutter.
  6. Add the turmeric powder, red chili powder, and gram flour and stir well.
  7. Slowly add the yogurt and water, whisking continuously to avoid lumps.
  8. Bring the mixture to a boil and then reduce the heat to low and let it simmer for 10-15 minutes, or until the kadhi thickens.
  9. Season with salt to taste.
  10. Gently add the pakoras to the kadhi and let them cook for an additional 2-3 minutes.
